Our special wash Willoughby allows us to connect with like-minded producers in the beverage industry. This iteration has been washed with Vinu Jancu, a naturally fermented orange wine by Domaine La Garagista. The folks at La Garagista helped pioneer winegrowing in Vermont and are a shining example of blending traditional methods with a minimal intervention philosophy. This wine is spontaneously fermented in open vats and moved into amphorae made from Vermont Champlain Sea Clay.
