What’s In The Box?

​​Harbison (3x5-ounce wheel)
A pocket-sized version of our beloved bark-wrapped beauty! Harbison is a soft-ripened cheese with a bloomy rind, like a brie. Young cheeses are wrapped in strips of spruce cambium, the tree's inner bark layer, which lends structure as the cheese ripens to become spreadably soft –to serve, slice off the top and go in with a spoon. Harbison is rich and flavorful, tasting of garlic butter and roasted cauliflower with a woodsy note from the spruce band.
