We’ve upgraded the size of Moses from the 8 oz wheel to the larger 1 lb wheel! Moses is an approachable and nuanced soft-ripened cheese. Beneath its thin, bloomy rind lies a gooey, milky core showing a complex array of flavors of cauliflower, crème fraîche, and toasted nuts. A bright, clean finish with a hint of white mushroom aroma follows.
Conundrum Goat Tomme (12-ounce wedge)
Every now and then, we make an experimental cheese that is tasty enough to share! This 100% raw goat milk tomme is a beautiful blend of earthy and bright. The cheese’s center is lactic and tastes like a fresh chevre. The creamline near the rind, though, the cheese becomes a little more mushroomy and hearty. Withersbrook Blue (8-oz wedge)
Withersbrook Blue is a rich, spreadable blue that has notes of sweet fermented fruit, mild winter spice, and rich buttercream. After 60 days of cave-ripening, this cube is placed into a special pouch and immersed in Eden Cider’s Heirloom Ice Cider. It is perfect for pairing with both sweet and savory foods: serve it up with raw honey or sprinkle it atop seared ribeye!
