Cabot Clothbound Cheddar Black Label (12-ounce wedge)
The best of the best of our Cabot Clothbound, our black label batches are hand-selected by our sensory team for their excellence in representing what the cheese can be. This approachable but complex natural-rind, bandaged cheddar with a crumbly yet smooth texture and nutty aroma. The flavor is deeply savory with chicken broth notes with caramel sweetness to the finish. Winner of the 2006 American Cheese Society’s Best of Show award!

Bayley Hazen Blue (8-ounce wedge)
Bayley has developed a loyal following because of its fudge-like texture, toasted-nut sweetness, and anise spice character. The paste is dense and creamy, with well-distributed blue veins. The usual peppery character of blue cheese is subdued, giving way to the grassy, nutty flavors in the milk.

Alpha Tolman (6-ounce wedge)
Our handsome and hearty Alpha Tolman is inspired by iconic Alpine cheeses like Comte and Beaufort, with a dense, smooth paste redolent of toasted nuts and roasted meat. Caramelized undertones and a fruity finish bring balance to this umami-forward crowd-pleaser.

Moses Sleeper (16-oz wheel)
Moses is an approachable and nuanced soft-ripened cheese. Beneath its thin, bloomy rind lies a gooey, milky core showing a complex array of flavors of cauliflower, crème fraîche, and toasted nuts. A bright, clean finish with a hint of white mushroom aroma follows.

Hungry Bird Nordic Crisps (5-ounce box)
These buttery crisps are inspired by Scandinavian flatbreads. Their nuttiness and melt-in-your-mouth texture make them a perfect vehicle for cheese.

Apricots & Orange Honey Preserves (10-ounce jar)
Created in partnership with Blake Hill Preserves, this preserve is designed to pair with washed rind cheeses.

Monti Verdi Lonzino (3-ounce package)
Lonzino is a lesser-know cured meat (coming from the loin) that produces a lean and sweet cut—almost like prosciutto. Monti Verdi—a Vermont charcuterie producer that employs old world techniques—leaves a nice layer of fat to add softness and silkiness. A long aging process of over four months allows for a complexity of flavors of this top-quality meat to emerge.
