With a semi-firm texture and subtle aromas of cave and grass, it’s balanced complexity harmonizes a bright buttermilk tang and savory brown butter notes. Makes a great melting cheese. (1/2lb wedge)
Harbison - Winner of the 2018 ACS Conference Best of Show, this soft-ripened cheese is wrapped in spruce cambium and has a rustic, bloomy rind. It’s woodsy and sweet, balanced with lemon, mustard, and vegetal flavors with a lovely spoonable texture. (9oz wheel)
Bayley Hazen Blue - Winner of the 2018 ACS Conference Best in Class and made with raw milk, this natural rind blue is known for its fudge-like texture, toasted-nut sweetness, and anise spice character. The paste is dense and creamy, with well-distributed blue veins. (1/2lb wedge)
