  • Harbison - Winner of the 2018 ACS Conference Best of Show, this soft-ripened cheese is wrapped in spruce cambium and has a rustic, bloomy rind. It’s woodsy and sweet, balanced with lemon, mustard, and vegetal flavors with a lovely spoonable texture. (9oz wheel)

  • Cave Aged Cheddar - Jasper Hill Farm’s Sensory Team selects each batch of this modern cheddar from Cabot Creamery for cave-finishing within a specially calibrated vault. During ripening, the smooth texture of the paste becomes dense and concentrated. A handsome, natural rind forms to impart unique aromas and thus overall complexity to the intensifying flavors. (6.5 oz piece)

  • Little Hosmer - Little Hosmer is an approachable and nuanced soft ripened cheese. Beneath its thin, bloomy-rind lies a gooey, milky core showing a complex array of flavors at peak ripeness: cauliflower, crème fraîche, and toasted nuts.  A bright, clean finish with a hint of white mushroom aroma follows the rich flavors of the paste.   • Alpha Tolman - Inspired by Alpine cheeses like Appenzeller and Gruyere, this Jasper Hill Creamery original is made with raw milk and has a buttery, fruit & nut flavor when young, developing bold meaty, caramelized onion flavors as it matures.   • Bayley Hazen Blue - Bayley Hazen Blue is a Jasper Hill Farm original, and is made from our high-quality whole raw milk. Bayley typically boasts a fudge-like texture, toasted-nut sweetness, and anise spice character. The paste is dense and creamy, with well-distributed blue veins. The usual peppery character of blue cheese is subdued, giving way to the grassy, nutty flavors in the milk. (1/2lb wedge)
