  • Landaff - This raw milk, Welsh-style cheddar is made by Landaff Creamery in New Hampshire and aged here at The Cellars at Jasper Hill. With a semi-firm texture and subtle aromas of cave and grass, it’s balanced complexity harmonizes a bright buttermilk tang and savory brown butter notes. Makes a great melting cheese. (1/2lb wedge)

  • Harbison - Winner of the 2018 ACS Conference Best of Show, this soft-ripened cheese is wrapped in spruce cambium and has a rustic, bloomy rind. It’s woodsy and sweet, balanced with lemon, mustard, and vegetal flavors with a lovely spoonable texture. (9oz wheel)

  • Cabot Clothbound Cheddar - An approachable but complex natural-rind, bandaged cheddar with a crumbly texture and nutty aroma. The flavor is deeply savory and slightly tangy, with caramel sweetness to the finish. Pair with Orange Marmalade with 10yr Single Malt Whisky. (1/2lb wedge)

  • Alpha Tolman - Inspired by Alpine cheeses like Appenzeller and Gruyere, this Jasper Hill Creamery original is made with raw milk and has a buttery, fruit & nut flavor when young, developing bold meaty, caramelized onion flavors as it matures.   • Jan’s Crisps - Delightful crackers made by Jan & Dave Gorham of Stowe, VT. These herbaceous crisps are chock-full of grains, nuts & occasionally dried fruit, but sliced thinly for a light, crispy texture. These are rich in flavor, but balanced in a way that won't overwhelm cheese. (4oz box)
