  • Bayley Hazen Blue - Winner of the 2018 ACS Conference Best in Class and made with raw milk, this natural rind blue is known for its fudge-like texture, toasted-nut sweetness, and anise spice character. The paste is dense and creamy, with well-distributed blue veins. (12 oz wedge)

  • Alpha Tolman - Inspired by Alpine cheeses like Appenzeller and Gruyere, this Jasper Hill Creamery original is made with raw milk and has a buttery, fruit & nut flavor when young, developing bold meaty, caramelized onion flavors as it matures.
