This fresh pork sausage is made with organic kimchi from Pete's Greens, a vegetable farm in Craftsbury, VT and our collaborator for the brand VT99 Meats. Kimchi is a spicy, korean-style fermented cabbage - in the context of a sausage it adds to the overall depth of flavor, contributing flavors of chili without the heat. There is also a brightness from the kimchi that isn't quite tangy, but makes these particularly delicious.
Ingredients: pork, kimchi (cabbage, salt, chili, onion, garlic, fish sauce, (anchovies, salt), ginger, sugar, rice four), salt. Available in 14-oz packs of 4 sausages. This product ships frozen and should arrive cool to the touch. Refrigerate on arrival and use within 2 weeks of receipt.
