Ledgenear Farm produces organic maple syrup from their family farm's land in West Glover, VT. Owners James Coe and Nella Cargioli also own and manage Andersonville Dairy, which supplies milk for many Jasper Hill cheeses. Our alpine style cheese, Alpha Tolman, is always made with Andersonville milk.
Along with dairy, sugaring is one of the oldest agricultural industries in Vermont, and one that depends on the delicate shift from winter into spring, when warm days and freezing nights set the maple sap flowing. Once evening temperatures grow too warm, or the developing trees start to bud, the short sugaring season comes to an end. In a good season, a single mature tree may produce 10-14 gallons of sap, but it can take over 40 gallons of sap to produce a single gallon of syrup! This is often a labor of love; an excuse to spend time in the woods or with family & friends in the sugarhouse.
This year's syrup crop is medium amber, heady with aroma and rich maple flavor.
