Conundrum

 

CONUNDRUM

THE CONUNDRUM PROJECT provides a flexible space for us to involve key retailers and chefs in the product development process. It is the name we give to any cheese that is delicious and interesting but not yet a permanent part of our collection. Conundrum will take many shapes over the years, but it will always be our effort to gather feedback from cheese professionals and share one-of-a-kind batches with our most engaged customers.

TODAY'S CONUNDRUM - A new variation on our soft cheese line! We started with our basic brie, Moses Sleeper, and applied a special brine that included Eden Ice Cider lees, or spent yeast. This byproduct of Eden's cider-making process imparts a delightful fruity note that plays nicely off the classic funky washed-rind flavors. This batch has a more acidic, curdy core, making for a dual textured ripeness that is creamy around the edges and fudgey in the center. This Conundrum is truly a one-off - enjoy this rare find for a very limited time!
